Rocky Road is a no-bake chocolate fridge slice, in which the marshmallow and the walnut give the distinctive "rocky road" effect.
1. Melt the dark chocolate with the butter slowly over steam – the water must NEVER touch the bottom of the bowl.
2. Take it off the heat, and stir in the honey, so it stays glossy.
3. Let it cool for 5 minutes – if you add the marshmallow too hot, it melts and disappears.
4. Fold in the coarsely crushed walnuts, the raisins and the halved marshmallows.
5. Smooth it into a baking-paper-lined tin, and press it down with the back of a spoon.
6. Put it in the fridge for at least 3 hours, then cut it into squares with a sharp knife.
Tip: It needs no baking; the marshmallow should stay whole in the slice – this gives the distinctive "rocky road" effect it is named after.
