The popular, spiced curd cheese spread of Hungarian cooking – ready in a few minutes, and everyone's favourite.
1. Beat the soft butter fluffy with a fork or whisk.
2. Add the pressed (fork-mashed) curd cheese and the sour cream, and work it smooth and creamy.
3. Stir in the paprika, the salt and the ground caraway – it colours a nice pink.
4. Chop the onion very finely, and fold it into the spread.
5. Mix it thoroughly, then covered, rest it in the fridge for at least half an hour, so the flavours come together.
6. Serve with fresh bread and things to nibble.
Tip: Toast the caraway seeds briefly in a dry pan before adding them – this way their aroma is far more intense and full.
