1. Put the instant coffee, sugar and 2 tablespoons of cold water into a shaker or jar.
2. Close tightly and shake vigorously for 20-30 seconds until you get a thick, light brown foam (you can also use a milk frother).
3. Put 4-5 ice cubes in a tall glass.
4. Pour the coffee foam over them.
5. Slowly pour in about 100 ml cold water and the milk so the foam rises to the top.
6. Serve at once with a straw.
Tip: Frappé was "invented" by accident in Thessaloniki in 1957 and has been the symbol of the Greek summer ever since. Greeks order it "sketo" (no sugar), "metrio" (medium) or "glyko" (sweet).
