Ambrosia is an old favourite of the American festive table – Thanksgiving and Christmas alike: a light, creamy fruit salad that needs no cooking. Its secret is the rest in the fridge.
1. Segment the 300 g mandarin, drain the 300 g canned pineapple and dice it.
2. Drain the fruit well on paper towel – excess juice would thin the cream.
3. Mix the 200 g sour cream with the 200 ml whipped cream to get a light, airy cream.
4. Gently fold in the fruit, the 50 g desiccated coconut and the 100 g halved cherries.
5. Finally add the 100 g marshmallows – if they are large, cut them in half.
6. Cover and chill for at least 3 hours, but preferably overnight.
Tip: The resting is essential: the marshmallows soften and soak up the cream – freshly made it is not quite there yet.
