The loaded baked potato is a filling, American-style dish: potato baked tender in its skin, loaded with crisp bacon, melting cheese and sour cream.
1. Wash the large potatoes, prick them with a fork in several places, and rub them with salt.
2. In a 200 °C oven bake them tender in about 1 hour – they are right when a fork slides in easily.
3. Meanwhile fry the bacon crisp in a dry pan, then cut or crumble it into small pieces.
4. Cut the baked potatoes in half, and fluff their insides with a fork.
5. Put a piece of butter on them to melt, then sprinkle over grated cheddar, sour cream and the crisp bacon.
6. Pepper it, sprinkle over chopped parsley, and serve warm.
Tip: Do NOT wrap it in foil while baking, as its skin steams – without foil it stays really crisp.
