1. Peel the ginger and slice it thinly – the thinner the slices, the more flavour is drawn out.
2. Cover with 500 ml water, bring to the boil and simmer covered for 10 minutes.
3. Take off the heat and let it cool for 3-4 minutes.
4. Stir in the lemon juice.
5. Only now add the honey, once the drink is no longer boiling hot – high heat destroys the honey's beneficial enzymes.
6. Strain into mugs, add a cinnamon stick and a slice of lemon, and sip hot.
Tip: The traditional British soother for a sore throat, without the alcohol. No substitute for medicine, but the warmth, honey and lemon genuinely help when you have a cold.
