1. Boil the sugar in 150 ml water until completely dissolved, then let cool; this is your sugar syrup.
2. Squeeze the lemons (about 150 ml juice).
3. Pick the mint leaves, setting aside a few nice sprigs for garnish.
4. Put the lemon juice, sugar syrup, mint leaves, remaining cold water and two large handfuls of ice cubes in a blender.
5. Blend until the ice is crushed and the drink is frothy, bright green and slushy.
6. Pour into glasses immediately and garnish with mint sprigs and lemon slices.
Tip: Limonana (from limon and nana, lemon and mint) is the summer favourite of Israel and the Levant and became really popular after an advertising campaign in the 1990s. Always blend it fresh, as the mint browns and the ice melts if it stands.
