Cheese-stuffed pork chop is a striking, juicy meat dish from which the melted cheese oozes out when you cut into it.
1. Cut a deep pocket into the side of the pork loin, taking care not to cut through the edges.
2. Fill it with thick slices of cheese.
3. Secure the opening with a toothpick so the cheese stays in during cooking.
4. Season with salt and pepper.
5. Sear it all over in a hot pan until every side is golden.
6. Cook it through in a 180 °C oven for a further 25 minutes.
