Garlic bread is a crisp-crusted companion fragrant with herb butter – an indispensable partner to soups, pastas and grilled dishes.
1. Beat the soft butter fluffy in a bowl with a fork.
2. Crush the garlic to a pulp with a garlic press – grated or chopped it would stay chunky and burn during baking.
3. Into the butter mix the finely chopped parsley, a pinch of salt and the grated parmesan.
4. Cut the bread on the diagonal, at about 2 cm intervals, but do NOT cut all the way through – the bottom should stay whole, to hold the slices together.
5. Spread the herb butter generously into the cuts.
6. Wrap it in foil and bake at 200 °C for 12 minutes, then open the foil and bake a further 5 minutes, so the top browns crisp.
Tip: The last 5 minutes without foil give the crisp crust – without it the bread would just soften.
