1. Peel the garlic and chop it very finely or crush it.
2. In a small bowl mix the soy sauce and black rice vinegar.
3. Add the sugar and stir until completely dissolved.
4. Stir in the garlic.
5. Finally add the chilli oil and sesame oil, but don't stir it in completely, so that the oil stays in nice spots on top.
6. Divide into small dishes and serve alongside the dumplings.
Tip: The basic ratio is 4:3 soy sauce to vinegar, but everyone mixes it to their own taste at the table. If you don't have black rice vinegar, use half rice vinegar and half balsamic vinegar.
