1. Rub the flour together with the cold butter until it has a crumbly texture.
2. Add half of the grated Trappista cheese, the egg yolk, the sour cream and the salt.
3. Knead a smooth dough, then wrap it in cling film and rest it in the fridge for at least 30 minutes.
4. Roll the dough out to a finger's thickness and cut it into strips.
5. Brush the strips with beaten egg and sprinkle them with the remaining grated cheese.
6. Bake at 190 °C until golden.
Tip: Sprinkled with caraway seeds it is more piquant.
