1. Preheat the oven to 200 °C and line a baking tray with baking paper.
2. Slit the dates lengthwise and remove the stones.
3. Push an almond into each date and close it.
4. Halve the bacon slices lengthwise and wrap each date tightly in a strip; secure with a cocktail stick if needed.
5. Place the rolls seam-side down on the tray and bake for 12-15 minutes, turning halfway, until the bacon is crisp and golden.
6. Leave to cool for a few minutes (the inside of the date gets very hot) and serve warm.
Tip: This sweet-and-salty pairing is a tapas-bar favourite – you can also make it in a frying pan, turning, in 6-8 minutes.
