1. Pour hot but not boiling water over the black tea and steep for exactly 4 minutes.
2. Remove the leaves – steeped longer it turns bitter and cloudy.
3. Dissolve the sugar in the still-warm tea.
4. Cool to room temperature, then refrigerate.
5. To serve, mix the cold tea and the lemonade roughly half and half.
6. Serve in tall glasses with plenty of ice, lemon slices and mint.
Tip: Named after the golfer Arnold Palmer, who always ordered it this way. Never chill the tea while hot – shocking it cold makes it cloudy.
