1. Wash the lemons thoroughly, then squeeze out their juice.
2. Dissolve the sugar in a little warm water to make a smooth syrup (so it doesn't stay grainy).
3. Mix the lemon juice and the sugar syrup together in a jug.
4. Top up with cold water and stir well.
5. Taste and adjust the acidity with a little more sugar or water to your liking.
6. Serve cold over plenty of ice, garnished with a slice of fresh lemon if you like.
Tip: Citron pressé is the classic French terrace drink – traditionally the lemon juice, sugar and water are served separately so everyone can mix it to their own taste. It is best with freshly squeezed lemon.
