1. Make two strong espressos (about 30 ml each).
2. Heat the milk in a small pan or milk frother until hot (about 65 °C) and froth it lightly.
3. Warm two tall heatproof glasses with hot water, then pour it away.
4. Divide the hot milk between the glasses, holding back the foam with a spoon.
5. Slowly pour the coffee in a thin stream down the side of the glass so the coffee and milk form layers; the foam goes on top.
6. Serve with sugar, a long spoon and a pastel de nata.
Tip: Galão is the breakfast drink of Portuguese cafés: roughly one quarter coffee to three quarters milk – if you like it stronger, ask for a "galão escuro" (dark), if milder, a "galão claro".
